What to know about cake pans
The material your cake pan is made of matters because it's in direct contact with food at high temperatures for extended periods. Heat can cause certain materials to leach into what you're baking, so the construction and coating of your pan are worth paying attention to.

- Nonstick coatings are common on cake pans and deserve a closer look — many contain PFAS, a large family of synthetic chemicals used to create slick surfaces.
Check the cake pans you already own
Look at the materials and coatings on your current cake pans. Flip them over or check the original packaging or product listing for details on what they're made of.
- If your pan has a dark nonstick coating, check whether the brand confirms it is PFAS-free — not just PTFE-free, since PFAS includes thousands of other chemicals beyond Teflon.
- Pans made of plain aluminum (uncoated, not hard-anodized) or those with chipping or peeling coatings are good candidates to replace first.
Use your current cake pans more safely
If you're not ready to replace your cake pans right away, a few simple adjustments can reduce direct contact between food and the pan surface.
- Line your pan with unbleached parchment paper to create a barrier between the batter and the pan's coating or surface.
